STRAWBERRY GLAZE PIE

Back in the 1970’s, the Beattyville Women’s Club offered a cookbook with recipes from women in the community. Our dear family friend, Ruth Morton, gifted one of these cookbooks to my grandmother and fellow columnist, Betty Crabtree. My grandmother has now passed the cookbook on to me, and we are going to start sharing these recipes with our readers each week just exactly how it was written.

STRAWBERRY GLAZE PIE
8 or 9 inch pie shell (baked)
1 qt. strawberries
1 c .water
1 c. sugar
3 Tbsp. cornstarch
Red Food Coloring
Simmer 2/3 cup water and 1 cup berries for 3 minutes. Blend sugar, cornstarch and 1/3 cup water. Add to boiling berries. Boil 1 minutes, stirring constantly. Remove from heat. Arrange 3 cups berries in pie shell. Cover with sauce. Refrigerate 2 hours. Red food coloring may be added to make it bright red.
